If you’ve been missing that gooey, melty, stretchy cheese on pizza, toasties or baked potatoes — this one is going to surprise you.
This vegan corn cheese is creamy, savoury, slightly sweet and stretches beautifully when hot. Best of all, it’s made from simple whole-food ingredients and comes together in just minutes on the stove top.
No nuts.
No oil.
No store-bought vegan cheese.
Just real ingredients doing magical things

This recipe is perfect if you’re transitioning to plant-based eating or want a healthier alternative to processed vegan cheeses.
Corn provides:
Natural creaminess
Mild sweetness (like mozzarella)
Thickness without heavy fats
When blended and heated with tapioca starch, it transforms into that familiar elastic, melted cheese texture — without dairy or cashews.
It’s one of my favourite kitchen tricks.
Vegan Corn Cheese
½ cup corn kernels (fresh or frozen)
1 tablespoon nutritional yeast
Dash of white pepper
1 cup water, vegetable stock or unsweetened plant milk
2 tablespoons tapioca flour
½ teaspoon coarse Celtic sea salt
Add all ingredients to a high-speed blender.
Blend until completely smooth.
Step 2: Heat
Pour the mixture into a non-stick pan or saucepan.
Place over medium heat.
Stir continuously as the mixture heats.
Within 3–5 minutes it will:
Thicken rapidly
Become glossy
Turn stretchy and gooey
Once it looks like melted cheese — it’s ready.
The cheese will be:
Super stretchy when hot
Firm when cooled
Melty again when reheated
Perfect for pizza, toasties and baked dishes.
This recipe is incredibly versatile. Try it on:
🥪 Toasties & grilled sandwiches
🍕 Pizza
🥔 Baked potatoes
🌮 Nachos
🥦 Over steamed vegetables
🍝 Stirred through pasta
It’s especially amazing poured over a hot pizza base and baked until bubbly.
Store:
Airtight container
Fridge for up to 4 days
Reheat:
Stovetop with a splash of water or plant milk
Microwave, stirring halfway
The stretch returns once heated.
